2 cups (about 8 oz) shredded Mexican blend, cheddar, or cheddar jack cheese
Instructions
Pre-heat oven to 350°F.
Season beef with salt and pepper and cook in a 12-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
Stir 2 cups salsa in the skillet and heat to a boil. Reduce the heat to low and cook for 5 minutes or until the beef is done.
Arrange the tortilla chips on a rimmed baking sheet. Top with the beef mixture and cheese.
Bake until the cheese is melted, about 5 minutes. Top with the remaining 1 cup salsa, and get your toppings on (i.e., sour cream, guac/chopped avocado, refried beans, sliced black or green olives, jalapenos, diced green or red onions, shredded lettuce, chopped tomatoes, chopped cilantro, ranch dressing…you do you.)
